Submission means many things to many different people.
Definition:
...the action or fact of accepting or yielding to a superior force or to the will or authority of another person. - Oxford Language
When I think of submission I think of surrendering my power to another. I think of being free from having to be responsible for anything other than what my Dom asks of me. The rest of the world doesn't matter in those moments. It's just my Dom and me.
Submission can be displayed however your dynamic deems proper. There are some who fully submit themselves meaning they have no control over what they wear, what they eat, who they talk to, etc. They want nothing to do with the details and only want to please their partner by doing what they ask/demand. They feel safe and secure knowing that someone else is in control of those aspects of their lives.
Others might not want to give up that much of their lives. Generally middles fall into this category. We do want to be controlled, but we also need to have autonomy (an individual sense of self). Without it, we may feel caged, and not in a kinky way! Middles are an in between of "dominate me" and "I got this...".
Some people only want to be submissive in sexual situations. They keep their lives and kinks separate and are only interested in giving up that control in the bedroom (or wherever they choose). This is just another way of submitting.
However you choose to submit may look different than someone else's choice. It doesn't make it wrong, just different. People are comfortable with many levels and paths of submission. Have fun with it and learn what works for you and your partner!
